Salt Fish Cakes (Akra)

Ingredients
- 2 tbsp oil
- 1 cup flour
- 1 tsp baking powder
- 1 egg slightly beaten
- 3/4 cup milk
- 1 tbsp butter melted
- 1/2 lb salt fish, flaked
- 1 cup onion finely chopped
- 2 tbsp shallots finely chopped
- Black pepper
- Hot pepper sauce
Method
- Heat oil and cook onion until wilted
- Sift flour and baking powder into a bowl
- Make a well and pour in egg, butter and milk
- Mix together lightly, then add onion, salt fish, black pepper and pepper. Stir well
- Drop by spoonful in hot oil
- Cook until golden on both sides
