Salt Fish Cakes (Akra)

A. Helen's Recipe

Ingredients

  • 2 tbsp oil
  • 1 cup flour
  • 1 tsp baking powder
  • 1 egg slightly beaten
  • 3/4 cup milk
  • 1 tbsp butter melted
  • 1/2 lb salt fish, flaked
  • 1 cup onion finely chopped
  • 2 tbsp shallots finely chopped
  • Black pepper
  • Hot pepper sauce

Method

  1. Heat oil and cook onion until wilted
  2. Sift flour and baking powder into a bowl
  3. Make a well and pour in egg, butter and milk
  4. Mix together lightly, then add onion, salt fish, black pepper and pepper. Stir well
  5. Drop by spoonful in hot oil
  6. Cook until golden on both sides
