Sweet Paymee
Ingredients
Yields 30
- 4 cups cornmeal
- 3 tsp baking powder
- 1/2 pound margarine
- 2 cups grated coconut
- 1 cup grated pumpkin
- 2 cups milk + add 1 cup after mixing all ingredients
- 1/2 tsp white pepper
- 2 1/2 cups sugar
- 1 tsp powder spice
- 1 tsp vanilla essence
Instructions
- Put cornmeal into a large bowl, add baking powder, powder spice, white pepper and blend well.
- Stir in grated coconut and pumpkin.
- Mix essence into milk and mix to form a stiff dough.
- Add sugar to taste.
- Put spoonfuls on oiled banana leafs prepared for wrapping, fold into parcels, cover with foil on a doublelayer of leaves to avoid water from getting into mixture.
- Put into boiling water.
- Add sugar and salt to taste and when the water comes to a boil, add parcels.
- Cook for 1 hour, remove from water, drain and serve warm.
