Sweet Paymee

Ingredients

Yields 30

  • 4 cups cornmeal
  • 3 tsp baking powder
  • 1/2 pound margarine
  • 2 cups grated coconut
  • 1 cup grated pumpkin
  • 2 cups milk + add 1 cup after mixing all ingredients
  • 1/2 tsp white pepper
  • 2 1/2 cups sugar
  • 1 tsp powder spice
  • 1 tsp vanilla essence

 

Instructions

  1. Put cornmeal into a large bowl, add baking powder, powder spice, white pepper and blend well.
  2. Stir in grated coconut and pumpkin.
  3. Mix essence into milk and mix to form a stiff dough.
  4. Add sugar to taste.
  5. Put spoonfuls on oiled banana leafs prepared for wrapping, fold into parcels, cover with foil on a doublelayer of leaves to avoid water from getting into mixture.
  6. Put into boiling water.
  7. Add sugar and salt to taste and when the water comes to a boil, add parcels.
  8. Cook for 1 hour, remove from water, drain and serve warm.
