Ricotta Gnocchi
Light and pillowy
Ingredients
- 250g ricotta
- 3/4 cup grated Parmesan
- 3/4 to 1 cup flour
- One egg
- 1/4tsp salt
- Black pepper
- Nutmeg
Method
- Combine all ingredients except for flour
- Mix until egg is partially mixed into ricotta. Then add 3/4 cup flour and mix until just combined so it is a sticky soft dough. Use extra flour if needed
- Seperate and roll into logs, keep floured
- Cut into pieces and cook in until floating (approx 30 seconds)
- Strain then combine with sauce of choice. Can brown in butter for different texture
