Ricotta Gnocchi

Light and pillowy

Ingredients 

  • 250g ricotta
  • 3/4 cup grated Parmesan
  • 3/4 to 1 cup flour
  • One egg
  • 1/4tsp salt
  • Black pepper
  • Nutmeg

Method

  1. Combine all ingredients except for flour
  2. Mix until egg is partially mixed into ricotta. Then add 3/4 cup flour and mix until just combined so it is a sticky soft dough. Use extra flour if needed
  3. Seperate and roll into logs, keep floured
  4. Cut into pieces and cook in until floating (approx 30 seconds)
  5. Strain then combine with sauce of choice. Can brown in butter for different texture
