Scotch Tea Pancakes

Ingredients

  • 1/4 cup (2-oz) butter
  • 1/2 cup icing sugar
  • 1 egg slightly beaten
  • 1 cup sifted flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 2/3 cup milk

 

Topping

  • Light custard or jam
  • Fresh or canned fruit

 

Instructions

  1. Cream butter and sugar.
  2. Add slightly beaten egg.
  3. Sift flour, baking powder, baking soda and salt together.
  4. Add flour to mixture alternatively with milk to creamed butter stirring to keep smooth. End with flour. DO NOT OVERMIX.
  5. Heat ungreased non-stick pan over low heat.
  6. Drop 1 tsp of batter onto pan. Turnover when butbbles appear.
  7. Remove from pan when lightly browned or when cooked.
  8. Butter on jam or a light cooled custard and top with fresh or canned fruit.
  9. Serve cold.
