Scotch Tea Pancakes
Ingredients
- 1/4 cup (2-oz) butter
- 1/2 cup icing sugar
- 1 egg slightly beaten
- 1 cup sifted flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 2/3 cup milk
Topping
- Light custard or jam
- Fresh or canned fruit
Instructions
- Cream butter and sugar.
- Add slightly beaten egg.
- Sift flour, baking powder, baking soda and salt together.
- Add flour to mixture alternatively with milk to creamed butter stirring to keep smooth. End with flour. DO NOT OVERMIX.
- Heat ungreased non-stick pan over low heat.
- Drop 1 tsp of batter onto pan. Turnover when butbbles appear.
- Remove from pan when lightly browned or when cooked.
- Butter on jam or a light cooled custard and top with fresh or canned fruit.
- Serve cold.
