Red Bean Shaved Ice

Ingredients
- 1 cup of red (adzuki) beans
- 4 cups water
- 1 cup sugar
- 1 tsp vanilla
- 1/2 tsp salt
- Rinse and strain red beans and put in thick-bottomed pot
- Add water, boil for 10 minutes.
- Turn down and simmer for 1 hour, until beans are well cooked.
- Drain water, add sugar vanilla and salt. Mix well.
- Simmer for 5 minutes.
- Cool and put in fridge so it's cold when served.
