Cassava Pone
As dictated by mom! Estimated measurements were added in parentheses.
Ingredients:
- 3 packs grated cassava (6 cups)
- 1 pack grated coconut (454g) (2 cups)
- Vanilla (2tsp)
- 1 cup water
- 2 1/2 cups sugar
- 2 1/2 tsp cinnamon
- Nutmeg
- 2 tbsp melted butter
- 1 cup raisins
- pureed pumpkin (optional, mix with the water) (1 cup)
Method:
- Mix all ingredients and pour into a greased glass dish.
- Bake at 350F for 1.25-1.5hr or until browned and done.
- Cool, cut and eat!
