Cassava Pone

As dictated by mom! Estimated measurements were added in parentheses.

Ingredients:

  • 3 packs grated cassava (6 cups)
  • 1 pack grated coconut (454g) (2 cups)
  • Vanilla (2tsp)
  • 1 cup water
  • 2 1/2 cups sugar
  • 2 1/2 tsp cinnamon
  • Nutmeg
  • 2 tbsp melted butter
  • 1 cup raisins
  • pureed pumpkin (optional, mix with the water) (1 cup)


Method:

  1. Mix all ingredients and pour into a greased glass dish.
  2. Bake at 350F for 1.25-1.5hr or until browned and done.
  3. Cool, cut and eat!
