Coconut Blancmange

Ingredients

  • 1 large dried Coconut
  • 1 can Evaporated Milk
  • 1 can Condensed Milk
  • 2 envelopes Gelatin
  • 1 cup boiling Water
  • 3 tbsp Sugar

Instructions

  1. Liquefy coconut in blender
  2. Squeeze out coconut milk; keep husk separate.
  3. To coconut milk, add evaporated milk, condensed milk, and the gelatin which has been melted in the water.
  4. Put mixture in the fridge to set.
  5. Fry coconut husk in fry pan with sugar, stirring constantly over low heat until golden brown.  Remove immediately after browned.
  6. Serve blancmange in individual bowls sprinkled with coconut husk.  Garnish with cherry.
