Quinoa Tabbouleh Salad
Ingredients
- 1 cup quinoa
- 2-3 tomatoes, small dice
- 1 large cucumber, diced
- 1 can chick peas, drained
- Sunflower seeds
- Pepitas
- Optional - raisins
- Lemon juice
- Olive oil
- 1 cup chopped mint
- 1/2 cup chopped Parsley
- Chopped Purple Onion
- Salt as required
Method
- Cook 1 cup quinoa with 2 cups water or stock in a pot. Salt optional
- When cooked cool fully in fridge
- Chop vegetables and herbs
- Combine all ingredients with lemon olive oil dressing. Add salt as required
