Quinoa Tabbouleh Salad

Ingredients

  • 1 cup quinoa
  • 2-3 tomatoes, small dice
  • 1 large cucumber, diced
  • 1 can chick peas, drained
  • Sunflower seeds
  • Pepitas
  • Optional - raisins
  • Lemon juice
  • Olive oil
  • 1 cup chopped mint
  • 1/2 cup chopped Parsley
  • Chopped Purple Onion
  • Salt as required

Method

  1. Cook 1 cup quinoa with 2 cups water or stock in a pot. Salt optional
  2. When cooked cool fully in fridge
  3. Chop vegetables and herbs
  4. Combine all ingredients with lemon olive oil dressing. Add salt as required
