Stuffed Baked Potatoes
Ingredients
- Potatoes (red or yellow preferably)
- Broccoli
- Mushrooms
- Bacon
- Cheese
- Butter
- Milk or Sour Cream
- Black pepper
- Salt
Instructions
- Wash potatoes and boil.
- When cooled, cut potatoes in half and scoop out inside of potato leaving the peel intact.
- Mash the potato insides wtih butter, milk/sour cream, black pepper and salt.
- Cut broccoli florettes and blanch.
- Wash and fry mushrooms.
- Fry the bacon.
- Re-stuff the potato skins with the mash potato.
- Place a broccoli florette, mushroom and peice of bacon on each potato half.
- Cover with cheese and bake until cheese is melted and potatoes are re-warmed.
