Stuffed Baked Potatoes

Stuffed Baked potato

 

Ingredients

  • Potatoes (red or yellow preferably)
  • Broccoli
  • Mushrooms
  • Bacon
  • Cheese
  • Butter
  • Milk or Sour Cream
  • Black pepper
  • Salt

 

Instructions

  1. Wash potatoes and boil.
  2. When cooled, cut potatoes in half and scoop out inside of potato leaving the peel intact.
  3. Mash the potato insides wtih butter, milk/sour cream, black pepper and salt.
  4. Cut broccoli florettes and blanch.
  5. Wash and fry mushrooms.
  6. Fry the bacon.
  7. Re-stuff the potato skins with the mash potato.
  8. Place a broccoli florette, mushroom and peice of bacon on each potato half.
  9. Cover with cheese and bake until cheese is melted and potatoes are re-warmed.
