Dungeness Crab Cakes

Ingredients

  • 1 pound crab meat (cleaned)
  • 2 tsp Scallions (chopped)
  • 2 tsp Red pepper (chopped)
  • 2 tsp Celery (chopped)
  • 1 tbsp Mayonnaise
  • 3 tbsp Egg (approx 1 egg, whipped)
  • 1 cup Panka bread crumbs
  • Pinch of Paprika
  • Pinch of Chili powder
  • Pinch of Salt
  • Pinch of Pepper

Instructions

  1. Break up the meat
  2. Add peppers, celery, scallions, and spices
  3. Combine to form paste
  4. Then add eggs and bread crumbs to thicken
  5. Form into cakes
  6. Deep fry or sauté in olive oil
  7. Serve with greens and balsamic vinegar
