Crab Cakes

Sauce

Ingredients

  • 3 tbsp Butter
  • 3 tbsp Flour
  • 1 cup Milk, heated
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Melt butter in a sauce pan
  2. Stir in flour, cook stirring constantly, until just bubbly, for approx. 2 minutes (do not let burn)
  3. Add the hot milk, stirring until thickened
  4. Bring to a boil
  5. Salt & pepper; lower heat and cook, stirring for 2-3 minutes more
  6. Remove from heat
  7. Cool, and if desired, refrigerate sauce, covered, for a later use

Patty

Ingredients

  • 2 cups Crabmeat
  • ½ tsp Salt
  • ½ tsp Dry Mustard
  • Pinch of Cayenne Pepper
  • 1 ½ tbsp Lemon juice
  • 1 cup cooled thick creamy sauce (above)
  • 1 ½ cups freshly made Breadcrumbs
  • Oil

Instructions

  1. Warm a platter in a 250°F oven
  2. Combine crabmeat, salt, dry mustard, cayenne pepper, lemon juice, and cooled sauce
  3. Refrigerate for at least 1 hour, until well chilled
  4. Shape mixture into small patties; roll patties into fresh breadcrumbs
  5. In a heavy bottomed frying pan, heat 1 inch (2.5cm) oil to 360°F (182°C)
  6. Fry a few patties at a time (do not crowd), until golden, over medium heat
  7. Do not fry too quickly, or the inside of the patties will be cold!
  8. Drain onto paper toweling; keep warm in the oven, until all the patties are done
