Eggplant and Beef Stew

Eggplant and Beef stew

Ingredients

  • 1lbs stewing beef
  • 2 round eggplants
  • 1 onion
  • celery
  • garlic
  • thyme
  • sugar
  • salt
  • Black pepper
  • oil
  • tomato (optional)

 

Instructions

  1. Brown sugar in oil until bubbly and dark brown.
  2. Add beef, onion, celery, garlic and thyme. Brown then add water and cook until soft (15mins in pressure cooker, 45mins in regular pot).
  3. Reduce liquid, then add diced eggplants.
