Eggplant and Beef Stew
Ingredients
- 1lbs stewing beef
- 2 round eggplants
- 1 onion
- celery
- garlic
- thyme
- sugar
- salt
- Black pepper
- oil
- tomato (optional)
Instructions
- Brown sugar in oil until bubbly and dark brown.
- Add beef, onion, celery, garlic and thyme. Brown then add water and cook until soft (15mins in pressure cooker, 45mins in regular pot).
- Reduce liquid, then add diced eggplants.
