Peas and Rice

Ingredients

  • 1 1/2 cup pigeon peas or red beans
  • 6 cups chicken stock
  • Garlic
  • Onion
  • Celery
  • Sweet peppers
  • Tomato
  • Parsley
  • Thyme
  • Rice
  • hot pepper to taste
  • Salt

 

Instructions

  1. Season peas with garlic, onion, peppers, tomato, parsley and thyme.
  2. Cook peas for  3-5 mins.
  3. Add washed and drained rice and chicken stock.
  4. Bring to a boil, lower heat, cover and cook until rice is tender (~30mins).
