Peas and Rice
Ingredients
- 1 1/2 cup pigeon peas or red beans
- 6 cups chicken stock
- Garlic
- Onion
- Celery
- Sweet peppers
- Tomato
- Parsley
- Thyme
- Rice
- hot pepper to taste
- Salt
Instructions
- Season peas with garlic, onion, peppers, tomato, parsley and thyme.
- Cook peas for 3-5 mins.
- Add washed and drained rice and chicken stock.
- Bring to a boil, lower heat, cover and cook until rice is tender (~30mins).
