Kabuli Pulao

It's Afghan rice!

Afghan rice

Ingredients

  • 4 cups basmati rice
  • 1 large diced onion
  • 2 large carrots julienned
  • 1 cup raisins (golden sultanas)
  • 1.5tsp cumin (more if cooking with meat)
  • 1.5 tsp cinnamon
  • 1/4tsp ground cloves
  • 1.5tsp ground cardamom
  • Pinch saffron (optional)
  • 4cups water
  • 1can broth (if not using meat)
  • 2lbs Lamb or chicken (optional)
  • 1tsp sugar
  • Salt and pepper to taste
  • Olive oil
  • 1/2cup Almonds (optional)

Instructions

  1. Wash rice and let soak for minimum 30minutes
  2. Add oil to pot and fry onions until golden
  3. If cooking with meat, brown meat in pot. Add 4cups water, salt and pepper, let it boil up then simmer on low until meat is tender. Remove meat.
  4. Cut carrots into matchsticks. Add sugar to oil until syrop, add carrots and cook until lightly brown and tender. Remove then cook raisins until swollen. If using nuts, fry in oil until golden brown.
  5. Boil 5 cups of water with 1tsp of salt. Parboil rice for 3-5 minutes then strain
  6. Add rice, seasonings, meat with excess liquids (broth and water if not using meat), raisins and carrots (on top) to baking dish and mix.
  7. Cover and bake for 30-45minutes on 350F
