Pelau
Ingredients
- Pigeon peas (in can)
- Okra
- Squash or pumpkin
- Chicken and or other meat
- Rice
- Tomatoes (fresh, frozen, canned or ketchup)
- Green seasoning
- Worcestershire sauce
- Bell pepper or pimento pepper
- Whole hot pepper with stem (optional)
- Onion
- Ginger
- Garlic
- Soy sauce or ketchup
- Black pepper
- Salt
- Sugar (2-3 tbsp)
- Water or chicken broth (if not using much meat)
Instructions
- Wash pigeon peas and season with tomatoes, onions, black pepper and green seasoning.
- Cut chicken and season with ginger, garlic, soy sauce, black pepper, sugar, green seasoning, tomatoes, onion, sweet pepper and worcestershire sauce.
- Peel pumpkin, wash okra and cut okra.
- Heat oil in pot add sugar and cook until browned.
- Add chicken to pot, stir well and cook until almost done. Remove.
- Cook peas for a few minutes.
- Add washed rice (no water) and mix well.
- Add water (~ 3-4 cups depending on amount of water in chicken) and stir.
- Let it boil up, stir well and taste for salt.
- Add chicken, pumpkin, okra and hot pepper on top, turn heat down to low, cover and cook for 25-30 mins or until rice is cooked.
- Add more water if rice is still hard and continue cooking.
