Okra and Rice

Okra and Rice

 

Ingredients

  • 3 cups White or Brown Rice
  • 1/4 pound Salt fish
  • 1 diced onion
  • 2-3 cloves garlic minced
  • 1 cup Pumpkin diced
  • 18 okras chopped
  • 1 sprig thyme or green seasoning
  • Chicken stock or magi cube
  • 1 can coconut cream or 1/4 block condensed coconut
  • Black pepper
  • No salt needed if using salty salt fish ( if saltfish has not been soaked for too long)

 

Method

  1. Soak salt fish and shred
  2. Fry garlic, onions, salt fish and other seasonings lightly
  3. Add washed rice
  4. Add stock or magi cube and coconut cream (water if no stock used)
  5. Stir well
  6. When boiling, add okra and pumpkin
  7. Reduce heat and let steam.
  8. Once liquid is absorbed by rice, turn to minimun until fully cooked
