Okra and Rice
Ingredients
- 3 cups White or Brown Rice
- 1/4 pound Salt fish
- 1 diced onion
- 2-3 cloves garlic minced
- 1 cup Pumpkin diced
- 18 okras chopped
- 1 sprig thyme or green seasoning
- Chicken stock or magi cube
- 1 can coconut cream or 1/4 block condensed coconut
- Black pepper
- No salt needed if using salty salt fish ( if saltfish has not been soaked for too long)
Method
- Soak salt fish and shred
- Fry garlic, onions, salt fish and other seasonings lightly
- Add washed rice
- Add stock or magi cube and coconut cream (water if no stock used)
- Stir well
- When boiling, add okra and pumpkin
- Reduce heat and let steam.
- Once liquid is absorbed by rice, turn to minimun until fully cooked
