Coconut rice
4 cups basmati rice
1 small onion
1/2 small red pepper or other tasty seasoning pepper
1 can coconut milk
1 can chicken stock
1 sprig fresh thyme
2 tablespoons butter
fry onion and pepper in olive oil until translucent. Wash rice and drain well. Add to pot and continue frying. Add stock, coconut milk, thyme! salt and pepper. Add water if more liquid is needed to cook rice. Bring to full boil, stir well, reduce heat and steam until cooked. add butter and fluff with fork before serving.
