Coconut Macaroons

Coconut macaroons

Ingredients

  • 3 egg whites
  • 1 ½ tbsp corn starch
  • 1 cup sugar
  • 1 ½ cup shredded coconut
  • 1tsp almond essence

 

Instructions

  1. Beat egg whites until stiff.
  2. Add ½ cup sugar gradually.
  3. Beat well.
  4. Sift remaining sugar and corn starch on top of mixture and fold in lightly.
  5. Add coconut.
  6. Cook over gently boiling water until a crust forms at bottom and sides of pan.
  7. Fold over once or twice while cooking.
  8. Remove from heat and add essence.
  9. Drop onto buttered sheets and bake in low oven until slightly brown and crisp.
