Coconut Macaroons
Ingredients
- 3 egg whites
- 1 ½ tbsp corn starch
- 1 cup sugar
- 1 ½ cup shredded coconut
- 1tsp almond essence
Instructions
- Beat egg whites until stiff.
- Add ½ cup sugar gradually.
- Beat well.
- Sift remaining sugar and corn starch on top of mixture and fold in lightly.
- Add coconut.
- Cook over gently boiling water until a crust forms at bottom and sides of pan.
- Fold over once or twice while cooking.
- Remove from heat and add essence.
- Drop onto buttered sheets and bake in low oven until slightly brown and crisp.
