Mango Chutney

A. Hilda's Recipe

Ingredients

  • 5 pounds green mangoes grated
  • 1/4 pound ginger grated
  • 2 pounds brown sugar
  • 1 head garlic
  • 1 pint malt vinegar
  • Salt and hot pepper to taste
  • 2 cups raisins and or currants

Method

  1. Peel and coarse grate green mangoes.
  2. Grate ginger and chop garlic.
  3. Put in heavy base pot, add sugar, vinegar, salt and chopped fresh hot pepper to taste. Boil on medium to low heat
  4. Add raisins and continue cooking while stirring until thick and consistence of jam.
  5. Fill into clean bottles.
