Mango Chutney
A. Hilda's Recipe
Ingredients
- 5 pounds green mangoes grated
- 1/4 pound ginger grated
- 2 pounds brown sugar
- 1 head garlic
- 1 pint malt vinegar
- Salt and hot pepper to taste
- 2 cups raisins and or currants
Method
- Peel and coarse grate green mangoes.
- Grate ginger and chop garlic.
- Put in heavy base pot, add sugar, vinegar, salt and chopped fresh hot pepper to taste. Boil on medium to low heat
- Add raisins and continue cooking while stirring until thick and consistence of jam.
- Fill into clean bottles.
