Moroccan Lamb Stew
Can make with beef instead!
Ingredients
- 2 1/2 pounds lamb or beef cut into cubes
- 1tbsp ground cumin
- 2tsp ground coriander
- 1 1/2tsp salt
- 1 tsp fennel seeds
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1 large onion chopped
- 4 large tomatoes
- 1tbsp minced fresh ginger
- 2 tsp grated lemon peel
- 2 cups chicken broth
- 1 can chickpeas
- 1 cup dried apricots
- 2 tbsp chopped cilantro
Method
- Add seasonings to meat in bowl
- Heat oil and brown meat. Remove from pot
- Add onions, tomatoes, ginger and lemon peel and cook until soft
- Add chicken broth and apricots
- Add meat back and simmer until liquid reduces
- Add chickpeas later on
- Can put into slowcooker
- Add cilantro before serving
