Moroccan Lamb Stew

Can make with beef instead!

Ingredients

  • 2 1/2 pounds lamb or beef cut into cubes
  • 1tbsp ground cumin
  • 2tsp ground coriander
  • 1 1/2tsp salt
  • 1 tsp fennel seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1 large onion chopped
  • 4 large tomatoes
  • 1tbsp minced fresh ginger
  • 2 tsp grated lemon peel
  • 2 cups chicken broth
  • 1 can chickpeas
  • 1 cup dried apricots
  • 2 tbsp chopped cilantro

Method

  1. Add seasonings to meat in bowl
  2. Heat oil and brown meat. Remove from pot
  3. Add onions, tomatoes, ginger and lemon peel and cook until soft
  4. Add chicken broth and apricots
  5. Add meat back and simmer until liquid reduces
  6. Add chickpeas later on
  7. Can put into slowcooker
  8. Add cilantro before serving
