Roulade

Ingredients

  • 2 tbsp margarine
  • 2tbsp flour
  • 1 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 1/4 tsp nutmeg
  • 1/4 tsp garlic powder
  • 2 sprigs parsley chopped
  • 1 tsp of fresh chopped dill (If using salmon)
  • 12 eggs separated
  • 1 1/2 cup diced chicken or turkey or ham or smoked salmon
  • 1 1/2 broccoli
  • 1/2 onion diced
  • 1/2 red pepper diced
  • 1 cup grated sharp cheddar

 

Directions

  1. In a pot, Melt margarine and stir in flour to make roux. Stir in milk and seasonings to make a smooth thick sauce.
  2. Divide eggs. Stir beaten yolks into sauce
  3. Stir in broccoli, cheese and meats
  4. Beat egg whites until stiff.
  5. Add sauce to egg whites, and fold together with a spatula. Do not over stir
  6. Line a cookie sheet with wax paper. Spread mixture evenly in pan.
  7. Bake at 400F for 20 minutes. Or until golden brown and firm to touch.
  8. Remove from oven and invert onto a tea towel. Remove paper and quickly roll up hot roll
  9. Slice and serve with sauce if desired

 

Sauce

  • 2 tbsp margarine
  • 2 tbsp flour
  • 3/4 cup chicken stock
  • 1/2 cup milk
  • 3 tbsp drained capers
  • 1 sprig green onions minced
