Pancakes

Ingredients

  • 1 1/3 cup flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 1/4 cup milk
  • 2 tbsp melted butter or vegetable oil
  • 1/4 tsp vanilla

 

Instructions

  1. Combine flour, sugar, baking powder and salt.
  2. In a small bowl, combine beaten egg, milk melted butter and vanilla.
  3. Make a well in the center of the dry ingredients and pour liquid all at once.
  4. Stir quickly until it comes freely from side of bowl.
  5. Drop small amount on a hot pancake griddle or frying pan. Grease frying pan with butter at he beggining only.
  6. Turn and brown other side and serve.

 

Variations:

Blueberry pancakes: Use 1/4 cup sugar and 1 cup blueberries, (grated lemon peel optional)

Banana pancakes: Use 2 tsp sugar and 3/4 cup pureed banana. Reduce milk to 1 cup
