Pancakes
Ingredients
- 1 1/3 cup flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg, beaten
- 1 1/4 cup milk
- 2 tbsp melted butter or vegetable oil
- 1/4 tsp vanilla
Instructions
- Combine flour, sugar, baking powder and salt.
- In a small bowl, combine beaten egg, milk melted butter and vanilla.
- Make a well in the center of the dry ingredients and pour liquid all at once.
- Stir quickly until it comes freely from side of bowl.
- Drop small amount on a hot pancake griddle or frying pan. Grease frying pan with butter at he beggining only.
- Turn and brown other side and serve.
Variations:
Blueberry pancakes: Use 1/4 cup sugar and 1 cup blueberries, (grated lemon peel optional)
Banana pancakes: Use 2 tsp sugar and 3/4 cup pureed banana. Reduce milk to 1 cup
