Granola

Ingredients

  • 2-3 cups large flake oats
  • 3/4 cup chopped almonds
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup candied ginger (chopped in small pieces)
  • 1/3 cup dried blueberries
  • Handful sunflower seeds
  • Handful pumpkin seeds
  • 1 tsp ground cinnamon
  • 1 tsp ground fennel seed
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup

 

Instructions

  1. Mix oats, almonds, coconut, cinnamon, and fennel seed in a bowl.  Add liquids and mix thoroughly.
  2. Bake at 350F for 20 minutes mixing once at the 10 minute mark.
  3. Check often at 15-20 mins to avoid burning. Add ginger and blueberries for last 2 minutes only.
