Granola
Ingredients
- 2-3 cups large flake oats
- 3/4 cup chopped almonds
- 1/2 cup unsweetened shredded coconut
- 1/3 cup candied ginger (chopped in small pieces)
- 1/3 cup dried blueberries
- Handful sunflower seeds
- Handful pumpkin seeds
- 1 tsp ground cinnamon
- 1 tsp ground fennel seed
- 2 tbsp coconut oil
- 2 tbsp maple syrup
Instructions
- Mix oats, almonds, coconut, cinnamon, and fennel seed in a bowl. Add liquids and mix thoroughly.
- Bake at 350F for 20 minutes mixing once at the 10 minute mark.

Check often at 15-20 mins to avoid burning. Add ginger and blueberries for last 2 minutes only.
