Chou Pastry

For making puffs and eclairs.

Ingredients

  • 1 cup water
  • 1/2 cup butter or margarine
  • 1 cup flour
  • 4 large eggs

 

Instructions

 

  1. Boil water in a small pan.
  2. Lower the heat to medium and add butter or margarine and allow .
  3. Bring mixture back to a boil and add all the flour.
  4. Stir quickly until mixture forms a ball that comes away from the side of the pan.
  5. Remove from heat.
  6. Add unbeaten eggs one at a time and beat until well incorporated.
  7. Beat mixture until the texture is smooth.

 

For puffs

  1. On waxed paper or parchment paper lined trays, drop rounded teaspoonfuls about 1 inch apart.
  2. Bake at 350F for up to 40 mins or until golden brown and cooked.
  3. Remove from paper while still hot and slit.
  4. Fill with chicken, tuna salad, custard or cream.

 

For eclairs

  1. Place mixture in piping bag or ziplock bag with corner cut off.
  2. Squeeze out eclairs onto wax paper or parchment paper lined trays.
  3. Bake at 350F for up to 40 mins or until golden brown and cooked.
  4. Remove from paper while still hot.
  5. Fill with custard or cream.
  6. Top or dip in chocolate.
