Chou Pastry
For making puffs and eclairs.
Ingredients
- 1 cup water
- 1/2 cup butter or margarine
- 1 cup flour
- 4 large eggs
Instructions
- Boil water in a small pan.
- Lower the heat to medium and add butter or margarine and allow .
- Bring mixture back to a boil and add all the flour.
- Stir quickly until mixture forms a ball that comes away from the side of the pan.
- Remove from heat.
- Add unbeaten eggs one at a time and beat until well incorporated.
- Beat mixture until the texture is smooth.
For puffs
- On waxed paper or parchment paper lined trays, drop rounded teaspoonfuls about 1 inch apart.
- Bake at 350F for up to 40 mins or until golden brown and cooked.
- Remove from paper while still hot and slit.
- Fill with chicken, tuna salad, custard or cream.
For eclairs
- Place mixture in piping bag or ziplock bag with corner cut off.
- Squeeze out eclairs onto wax paper or parchment paper lined trays.
- Bake at 350F for up to 40 mins or until golden brown and cooked.
- Remove from paper while still hot.
- Fill with custard or cream.
- Top or dip in chocolate.
