Ginger Beer
Part #1
- 1 pound organic ginger, throughly washed
- 3 cups water
- 1 lime worth of peels
- 1 cinnamon stick
- 1 tablespoon rice
- Use food processor or blender to chop up ginger with water.
- Add lime, cinnamon, and rice.
- Let it ferment for at least one day. Keep warm so the bacteria stay happy.
Part #2
- 5 cups of water
- Sugar
- 1/2 teaspoon vanilla essence
- Dash of bitters
- Cloves
- Strain mixture from Part #1.
- Mix in remaining ingredients, using sugar to sweeten to taste.
- Put in clean bottles that can seal well, adding 3 cloves to each bottle. Leave out for another day or so (so it can fizz up). Be careful when opening bottles, as it can make a mess!
- Store in fridge after desired fizziness is reached. Don't leave to out long or else it will taste yeasty.
Serve cold with ice.
